"THE HARVEY HOUSE COOKBOOK--MEMORIES OF DINING ALONG THE SANTA FE RAILROAD" is a collection of over 200 recipes from actual Harvey House Restaurants. From 1876 until the late 1940s Harvey House Restaurants were all along the Santa Fe. During WWII, Harvey House Restaurants had some 6500 employees which could feed some 6000 railroad passengers at one sitting. Fine china, silver, Irish linen napkins, well-groomed chefs and Harvey Girls made for a great atmosphere! They were famous for their food and waitresses--"Harvey Girls". Most all the recipes here are original recipes from individual chefs such as Chef John Garozzo of the Harvey House in Chicago Union Station. Some of the great old recipes here include Cream of Wisconsin Cheese Soup, Scallopini of Veal, Marsala, Pork & Spaghetti Piccata, Chicken Vesuvio, Lemon Cream Pie, Grand Canyon Strawberry Surprise, Huevos Rancheros La Fonda, Bechamel Sauce, and MANY more!
